olive oil
pinch of salt to taste

Add about 1/4 cup of olive oil and pulse a few more times to mix.
drizzle more olive oil until you get a good consistency
Put in bowl for later. It’s good to let this sit for at least 30 minutes for all the flavors to mix

Cut salmon down into roughly 1/2 in thick slices
then using cookie cutter, punch out salmon medallions

Slice avocado into 1/4 inch thick slices and put on plate for assembly station

Using the same cookie cutter as a guide, cut holes in top of buns being careful not to go all the way through. Optional: Lightly toast in oven

Place on cookie sheet and get ready to assemble.

Put some more olive oil in a medium hot non stick skillet.
Dust salmon medallions With Old Bay and place in pan. Cook 2-3 minutes per side. Remove from pan and place on plate for assembly station.
